In a move to reduce glass waste and promote sustainability, two prominent downtown restaurants—The Diamond Grill and The Bentley & Mirror Room—have partnered with Glass Act Recycling, a local grassroots organization, to launch a closed-loop glass recycling pilot. They are now the first local restaurants dedicated to recycle glass.
Restaurants typically generate significant amounts of glass waste—wine bottles, sauce jars, and drink containers that often end up in overcrowded municipal landfills. Recognizing this issue, Scott Laliberte, Chief Operating Officer of The Diamond Grill, realized a more effective and community-focused solution was close at hand.
“We have always been conscious of our waste and try to be as eco-friendly as a restaurant can be,” said Laliberte. “I wanted to take this one step further and support this local initiative.”
That’s when he connected with Annie Collins, founder of Glass Act Recycling. The nonprofit, run entirely by volunteers, collects glass from local residences — and now from The Diamond Grill and The Bentley & Mirror Room — and repurposes it into usable products.
Since launching the partnership a year ago, the two restaurants have diverted 12,580 pounds of glass from landfills.
“Glass can be recycled endlessly without losing quality,” said Collins. “This isn’t just about waste reduction—it’s about creating a circular economy that benefits the community.”
The success of the Laliberte–Collins partnership underscores the impact of local collaboration in addressing environmental challenges and demonstrates how small businesses can lead the way in sustainable innovation.
