Dad always made these with our burgers on the grill every summer and we loved them!! In memory of summers with Dad!
Ingredients:
- 2 cucumbers, peeled and sliced (I like the 5 small cucumbers because they are bite sized)
- 1 white onion, sliced into rings (red onion cut rings up to make them bite sized)
- 4 medium tomatoes sliced (thick slices and quartered-again bite sized)
- 1/3 cup white vinegar (red wine vinegar)
- 1/4 cup oil (extra virgin olive oil)
- ⅔ cup water
- 3 tbsp granulated sugar
- Salt and pepper to taste
Directions:
1. Prepare vegetables:
- 4 Cut tomatoes into thick slices then, quarter them,
- Cut onion into rings then cut rings up
- Peel and slice cucumbers
- Put all into bowl and set aside.
2. Make Dressing
- In a bowl, mix vinegar, oil, water, sugar, salt, and pepper.
3. Pour the dressing over the cucumber, tomato, and onion mixture. Stir well.
4. Chill: Refrigerate for up to an hour before serving. Can be eaten after an hour but I prefer to let them sit half a day or overnight to give everything a chance to absorb all the combined flavors.
