ROASTED CHICKEN AND VEGETABLES

Needed: 

One pan (Easy) 

Ingredients:

  • 2 chicken breasts (about 1 lb)
  • 2 cups broccoli florets (I added more)
  • 1 cup cherry or grape tomatoes 
  • 1 bell pepper cut up (color of your choice)
  • 4 tablespoons olive oil 
  • 1 teaspoon onion powder 
  • 1 teaspoon smoked paprika 
  • 1/2 teaspoon dried thyme 
  • Salt and black pepper to taste 

Instructions:

  • Preheat your oven to 425°F 
  • Place the chicken breasts remove skin and cut into pieces in a baking pan 
  • Scatter the broccoli (cut into pieces) , cherry tomatoes (cut in 1/2) and bell peppers (cut up) around the chicken.
  • Drizzle the olive oil over the chicken and vegetables.
  • Mix the onion powder, paprika, thyme, salt, and pepper together and sprinkle  over chicken and vegetables.
  • Roast in the oven for 20 minutes covered and 20 more uncovered or until the chicken is cooked through tender and the vegetables are tender and look caramelized. 
  • Remove from the oven and serve 

Hints: 

         I make double recipe to serve more than two people 
         Good as leftovers!! 
         I enjoy mine served with a tossed salad.
