Needed:
One pan (Easy)
Ingredients:
- 2 chicken breasts (about 1 lb)
- 2 cups broccoli florets (I added more)
- 1 cup cherry or grape tomatoes
- 1 bell pepper cut up (color of your choice)
- 4 tablespoons olive oil
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions:
- Preheat your oven to 425°F
- Place the chicken breasts remove skin and cut into pieces in a baking pan
- Scatter the broccoli (cut into pieces) , cherry tomatoes (cut in 1/2) and bell peppers (cut up) around the chicken.
- Drizzle the olive oil over the chicken and vegetables.
- Mix the onion powder, paprika, thyme, salt, and pepper together and sprinkle over chicken and vegetables.
- Roast in the oven for 20 minutes covered and 20 more uncovered or until the chicken is cooked through tender and the vegetables are tender and look caramelized.
- Remove from the oven and serve
Hints:
I make double recipe to serve more than two people
Good as leftovers!!
I enjoy mine served with a tossed salad.
