Castle Burgers

by Chef Dief

If you have not ordered a bag of Crystal or White Castle Burgers, you have not lived. The usual order is 6 to 20. I have an adaptation of this recipe. It is easy to make and will be a hit for any occasion. You will love these burgers and so will your kids and party guests!

2 lbs. Ground Beef
1/2 of a white onion – Finely chopped
Thin sliced fast food pickles – You can find them at Krogers in the condiment isle. That is the name of the pickles.
Whataburger Mustard – (Substitute Yellow mustard)
Ketchup
Sara Lee Hawaiian dinner rolls
Velveeta Cheese
Salt and Pepper

You want to start by flattening out the Ground Beef into a rectangle. The ground beef must be thinner than a 1/4 inch. If the ground beef is too thick, you end up making sliders not Castle burgers. A different taste and texture will result if the Beef is too thick, so flatten as thin as posible. Tip: Use a large knife and run it under the meat to release from chopping block. Once you have a thin layer in the shape of a rectangle. Cut into 12 equal squares and salt and pepper to taste. Prep the onion and cut the Velveeta into 12 large (At least 1/2 inch, thinner than you would expect) slices and have ready.

Cook the Beef about 2 minutes a side covered (on the stove, 6 at a time) When you flip the burgers, add a slice if Velveeta on each paddy and cover (Do not let the Cheese burn or brown). A couple of minutes later they are ready.

Have the buns prepped. Open buns and put the Mustard on the top side of the bun. Place the burger on the bun and add the onions and two pickles on each Burger. Serve with French Fries and you are ready to go!

Good Friends, Good Food and a Good Time!
Bon Appétit, Chef Dief
