Shrimp Scampi w/Angel Hair Pasta
Serves 4
2 dozen peeled 16/20 shrimp
1/2 pound angel hair pasta
4 cloves chopped garlic
Italian parsley, chopped fine
3 tbls. olive oil
1/2 tsp. oregano
Salt and pepper
2 cups of white wine – Italian Or whatever you like
1/2 stick of butter
Boil some water and start the angel hair pasta, half a box. In a large skillet, add the olive oil, garlic, salt, pepper, oregano and parsley, cook just enough to flavor the oil.
Add the butter and let melt, then add the 2 cups of wine and simmer to let the flavors incorporate for five minutes.
Add shrimp let cook for three minutes until shrimp are cooked and plump.
Drain the angel hair pasta and add to sauce. Serve on a plate and divide shrimp evenly.
