Ingredients:
2 Chicken Breasts
3 Stalks Celery
Romaine Lettuce
Baby Spinach
1 Tomato
Pecans or Sliced Almonds
Dried Cranberries/Craisins
Mayo/Miracle Whip (your choice)
Mustard
Salt
Pepper
Garlic Salt
Directions:
· Bake at 350 degrees chicken in covered roasting pan with water in base and season with butter poultry seasoning, garlic salt, and pepper. Bake 1 hour or until chicken is completely cooked. (I have also used a crock pot )
· Cool and dice chicken into small cubes.
· Dice celery and add to chicken.
· Add Mayonnaise or Miracle Whip until mixture is creamy
· Salt and Pepper to your taste
· Add a small amount mustard for a bit of tang
· Add ¾ cup of cranberries
Add:
o I add ¾ cup chopped pecans to mixture if it is going into a sandwich along with romaine lettuce and a tomato slice on bread or croissant
o I use almond slices if it is for a salad. I put one scoop of chicken salad on a bed of romaine lettuce and baby spinach and tomato topped with sliced almonds.
Spring is here so it time to try something light. This is a good lunch or light dinner. Enjoy!!!!
