There is nothing better than fresh, homemade salsa. You can make this one in a few minutes with a blender and some fresh ingredients. This recipe is a classic! Whether you are shoveling it on a chip, smothering some eggs, loading up a taco or some nachos, the result is smackdown, fresh Salsa that everyone loves.
The ingredients:
1 32 oz. can of Roma whole Tomatoes
1/2 white onion
4 cloves Garlic chopped
1/3 of 12 oz jar of diced jalapeno
1/3 of liquid from the jalapeno jar
1/2 the tops of a bunch of Cilantro
Salt and pepper
Pour the whole tomatoes in the blender. Chop the onion and add to blender. Chop the cilantro and add to blender along with the jalapeños and liquid. Next add garlic. Salt and pepper to taste. Then, set the blender on pulse and hit 5 or 6 times. Refrigerate and it is ready to serve.
It will stay fresh up to two weeks in the refrigerator but, at my house, it doesn’t last two days. You may also go through the canning process and it would last in the cabinet for a long time but, by cooking it, you will alter the taste.
