Just like Mother used to make!
Ingredients:
• 1 large onion, chopped
• 2 large carrots, sliced
• 3 celery stalks, chopped
• 1 medium head of cabbage, chopped
• 1 can (14.5 oz) diced tomatoes
• 8 cups chicken broth
• 2 cloves garlic, minced
• 1 tsp olive oil
• Salt and pepper to taste
• ½ tsp dried thyme
• ½ tsp basil
• ½ tsp oregano
• 1 bay leaf
Directions:
1. Prep the veggies: wash and chop cabbage, onion, celery into bite-sized pieces. Slice carrots thin slices
2. Put broth and vegetables olive oil in crock pot.
3. Add diced tomatoes (with juice),
4. Add salt, pepper, oregano, basil, thyme, bay leaves.
5. Turn crock pot on high and set timer for 4-6 hours. (Each crock pot cooks differently do set according to yours.)
6. Serve with bread or crackers. Makes a filling meal.
