This is a great way to have a delicious dessert in the summer without heating up your kitchen. Also, it is a “quick to make” dessert to take over to friends and they will be very pleased.
It is definitely a kid-friendly baking activity. My granddaughter love it … and eating them was her favorite part!
STEP 1
1. Blueberry Filling
Ingredients:
- ½ cup granulated sugar
- 1 ½ tablespoons cornstarch
- 2 cups blueberries, fresh (can use frozen)
- 3/4 cup water
- 1 teaspoon lemon juice
- ½ teaspoon vanilla extract
Instructions:
- Mix together the sugar and cornstarch in a medium sized saucepan. Stir until well mixed together.
- Add in the blueberries, water, lemon juice and vanilla extract to the dry mixture in pan and stir together until well blended.
- Cook on low to med heat until the liquid has reduced and thickened to your desired consistency. I tend to cook it on lower temp and make it a nice thick consistency. Make sure to stir constantly so it doesn’t burn or stick to the bottom of pan. It will create a low bubbling. It is best if blueberry mix is thick so it stays in pastry shell.
- Remove from the heat and allow to fully cool before putting into pie shell. It is also wonderful over ice cream if there is any left!
STEP 2
Pie Crust Ingredients
- 14.1 ounce refrigerated package pie crust (2 crusts) (can use homemade pie crust doubled)
Instructions
- Let pie crust come to room temperature in packaging (this keeps it from drying out)
- Cut the pie crusts into 5-inch circles or as close as you can get using a round cookie or biscuit cutter or small bowl.
- Using the blueberry pie filling onto the pie crusts on the bottom half of the crust. Moisten the edges of the pie crust circles with water using your finger tips. Fold dough over filling to creating a 1/2 moon shape; pinch the edges of the crust together, then crimp edges with a fork to seal.
- Make three slits in the crust on the top of the pies.
- Preheat the air fryer at 350 degrees F for 5 minutes. Spray the air fryer basket with nonstick cooking spray or use parchment paper.
- Place 2 or 3 in the basket (not letting edges touch) at a time and air fry for about 8-10 minutes or until the crust is golden brown. Carefully remove and transfer to a wire rack to cool. Repeat with remaining pies.
- After they are complete cooked drizzle with glaze and enjoy!!
- Don’t forget to lick spoon!!
STEP 3
Lemon Glaze
Ingredients:
1/2 whole milk
1/4 tsp vanilla
1/4 tsp lemon juice
1 cup ordered sugar
Directions:
Mix all ingredients into small
Bowl. Stir until right thickens to drizzle add sugar or lemon juice if needing to get it correct.
Drizzle with spoon over cooked pies when they have cooled. Let set then serve. (Another “spoon lick” may be in order :))
