MEATLOAF WITH RICH TOMATO SAUCE

YUMMY! Your family will LOVE it!!!

Ingredients:

1 lb. Ground Beef

3/4 Medium Onion

½ Red Pepper

½ Orange Pepper

 1 large or 3 small Garlic Cloves

¼ – ½ cup Oatmeal

1 egg

 I can Tomato Paste

Worchester Sauce  (to taste)

Salt and Pepper (to taste)

1 teaspoon Beef Paste

Directions:

1.     Preheat oven to 350 degrees

2.     Chop Onion and separate out into 2/3 and 1/3 portions

3.     Dice Red and Orange Pepper (Green Pepper can be added or substituted)

4.     Mince Garlic

5.     Put Ground Beef into pan with 2/3 of Onion, Peppers, Garlic, Egg and Oatmeal.  Mix together all ingredients and form into oval loaf.

6.     Put Tomato Paste, Warm Water (enough to dilute mixture), remaining onion and Worchester Sauce stirring to create a almost liquid paste that you can pour over the loaf and spread covering the whole loaf.   Saving some aside  

7.     Add to the paste set aside add to water in bottom of the  pan with added water to make a liquid for moisture and gravy.  Add beef paste to this to give the give it a heartier taste.

8.     Put lid on roasting pan and bake 45 minutes checking midway to see if you need to if you need to add any more water for Gravy.

9.     Cook another 10 – 15 minutes with lid off to brown.

10. Remove and make Gravy with Broth in bottom of Pan – adding water if needs to be thinned.  Bring it to a boil.  Using a  water and Cornstarch mixture add to broth to thicken to form gravy.  

11. Serve Meatloaf with Garlic Mashed Potatoes smothered in Gravy and a Salad or Vegetable of your choice.
