I had a very large chicken breast and with skin and bone in so I had to remove skin and bone. I like my chicken well done so I cooked it for 1 hour.
Ingredients:
• 2 boneless skinless chicken breast
• 1 tablespoon olive oil
• ¼ cup teriyaki marinate or sauce
• 1 cup canned pineapple chunks (I used tidbits because had that available)
• 1 red bell pepper sliced
• 1 green pepper, sliced
• 1 zucchini, sliced
• 2 green onions, chopped
Instructions:
1. Preheat oven at 400 degrees
2. Tear two pieces of pieces of tin foil sized to wrap each piece of chicken
3. Place foil in your pan
4. Put each piece of chicken in the center of the foil.
5. Drizzle in olive oil over chicken
6. Drizzle teriyaki over chicken
7. Add pineapple, red and green bell pepper, zucchini and green onions on top
8. Pull pieces of foil to cover tightly over chicken.
9. Cook for 45 minutes to 1 hour
10. Last 15 minutes uncover to brown a little
11. Serve it with your choice potatoes, rice and/or another vegetable of your choice!
