KOAL’S: KING OF BBQ & MORE …

An overcast, high 40 degree Wednesday afternoon may not seem like ideal BBQ weather on the outside, but take a drive down Coliseum Blvd. to Koal’s Bar-B-Que & Steakhouse where Chef Seth Guillotte is flexing his culinary prowess inside and serving up tasty options for the entire family.

If you like potato chips, these hand-cut Idaho russets sprinkled with Koal’s butt rub, a blend of eight seasonings, are a sure hit from the appetizer side of the menu. Did someone say fried crawfish tails? How about fried crawfish tails with queso? This unique combination may make you consider ditching tortilla chips in favor of fried crawfish tails next time you’re craving queso.

Next up, we’re treated to Chef’s rendition of BBQ shrimp … replacing the traditional dark sauce, these shrimp are smothered in a white roux and spiked with brisket drippings because, of course, we are talking BBQ, right.

How about some specialty cocktails? We had a Bloody Mary garnished with a thick, life-changing, slab-smoked candied bacon, a celery stalk, olives … the whole nine yards! We also enjoyed the Gringo Margarita which packs a punch similar to a Mike Tyson uppercut! This concoction of fresh squeezed lime juice, simple syrup, fresh squeezed orange juice, Reposado tequilla, blanco tequila, triple sec and Moonshine Everclear is definitely not for the lightweights.

Everything looks oh, so legit coming from the kitchen to the table. Between the mountain-sized burgers and sizzling steaks I will have to come back for more.

Right about the time we were ordering another round of drinks, the parade of BBQ began. Pulled pork, brisket, ribs, chicken and sausage on one plate. More brisket and ribs on another plate, along with dirty rice and mac & cheese, and some burnt ends just for good measure.

Strawberry Cheesecake with the graham cracker crust and bread pudding covered in a rum caramel sauce are the desserts that put ribbons on this fine feast.

The crew at Koal’s  is dedicated to getting it right. Whether it be daily preparation of fresh ingredients or late nights and early mornings on pit duty. Chef pulls a lot of his kitchen inspiration from years and years of Cajun Creole family recipes that he has perfected and reintroduced for all of Cenla and surrounding areas to enjoy.
